BREAKFAST IDEAS FOR GESTATIONAL DIABETES

For making simple healthy zucchini bread two large bowls and a loaf pan are required.

  • Eggs: 3 large
  • Avocado oil: 2 table-spoon
  • Vanilla extract: ½ teaspoon
  • Shredded Zucchini: 2 cups
  • Sugar: ½ cup
  • Ground cinnamon: 1 teaspoon
  • Salt: ½ teaspoon
  • Double-acting baking powder: 1 ½ teaspoon
  • Blue diamond almond flour: 2 cups

 

INSTRUCTIONS

  • Preheat the oven and shred the zucchini.
  • Combine the eggs, oil, and vanilla, and mix well in a large bowl. Add zucchini to the bowl and mix all the ingredients well.
  • In another bowl, add sugar, cinnamon, salt, baking powder, and flour. Mix all the ingredients.
  • Mix all the ingredients. The batter will be thick and it should be free from lumps.
  • Spray the loaf pan with non-stick spray, or spread some oil.
  • Spread the batter evenly and put it in the oven for 45 minutes and bake.
  • Remove the bread from the oven. Let it cool and cut it into slices.

  • Eggs: 2 large

  • Onions: 1 oz
  • Mushrooms: 1oz
  • Maple breakfast sausage: 2 oz
  • Egg: 1

IF USING FROZEN VEGGIES

  • If frozen veggies are being used, then heat the skillet on medium-high flame. When the skillet becomes hot, add the vegetables and let it cook. Cook the veggies until the water has dried completely and the skillet is dry.
  • Add the sausages to the veggies and mix well.
  • When the sausages are ready, add the egg to them and mix well.

 

IF USING FRESH VEGGIES

  • Heat the skillet on medium heat. When the skillet becomes completely hot, add butter or oil to it and cook peppers and onions for around 3-5 minutes.
  • Then add the mushrooms and sausages. Cook it well.
  • At the end add eggs and mix.

INGREDIENTS

  • Almond flour: 1 1/3 cups
  • Salt: pinch
  • Double-acting baking powder: 2 teaspoons
  • Coconut sugar: 1 table-spoon
  • Pumpkin pie spice: 1 ½ teaspoon
  • Cinnamon: ¼ teaspoon
  • Unsalted butter: 1 tablespoon
  • Pumpkin puree (canned): ¼ cup
  • Egg: 1 large

 

INSTRUCTIONS

 

  • Preheat the oven for 5 mins.
  • Take a bowl, add all the dry ingredients together. Add almond flour, salt, baking powder, sugar, pumpkin pie spice, and cinnamon. Add quantities of these dry ingredients as mentioned.
  • Cut the butter into different parts. Put some butter in the mixture and put some butter in hand too to squeeze it in the batter. Take the butter in hand and squeeze it in the batter until all the butter is added to the batter.
  • Mix the butter well in the batter and it will become semi-wet. Mix well the batter and the ingredients so that butter does not stick onto part only.
  • Take another bowl, add egg and pumpkin puree and mix it well.
  • Add the egg mixture to the batter. Mix the mixture well.
  • Take out parchment paper same as the size of the baking tray. Lay the paper on the tray. Pour the dough onto the paper. Place another parchment paper on the dough. Press the dough and shape it into a circle.
  • After shaping, remove the parchment paper from the top and place the tray in the oven. Bake the dough for 15-20 minutes.
  • Keep checking until the top of the dough becomes firm.
  • Let it cool for sometimes and then cut it into six equal slices and serve.
