I came across  this Diabetic Carrot French Fries recipe on the internet the other day and gave it a try. This is tasty and different treat. This recipe is a great alternative to classic french fries and a good way to get some healthier veggies into kids. This is easier to prepare too. It is simple and good. This recipe is gestational diabetes friendly.

  • 5 large carrots
  • 2 tablespoons olive oil
  • ½ teaspoon celtic sea salt

  1. Cut each carrot into 2-inch long sections
  2. Cut each section into thin sticks
  3. In a large bowl toss carrot sticks with olive oil and salt
  4. Spread out carrot sticks on a parchment paper baking sheet
  5. Bake at 450° for 20 minutes until carrots are browned

    This recipe is nice,although I would replace olive oil and use coconut oil instead.I dont like the taste of olive oil.
